Kek Lapis Chocolate Rice

Grade A chocolate worked through the layers, with chocolate rice scattered on top that keeps its crunch instead of dissolving into the cake. The one that disappears fastest at a gathering.

The 6 inch is the standard cake and the one most people order; it cuts into 8 to 10 slices Indicative. Step up to the 8 inch for a gathering of around 15, and the 9 inch when it is the centrepiece rather than one of several desserts.

Kek lapis is dense and rich, so slices are cut smaller than you would cut a sponge. Most people over-order rather than under-order.

Take it out of the fridge twenty minutes before serving. Cut with a warm, dry knife, wiping between cuts, and the layers stay clean rather than dragging into each other.

Each layer is grilled on its own, pressed flat, then topped with the next. A finished cake can run past twenty passes. It is why kek lapis costs what it does, and why a machine has never quite managed it.
