Thirty years of the same method
Kek Lapis is not baked so much as assembled. Each layer goes under the grill on its own, is pressed flat, and only then does the next one go on. A single cake can run to more than twenty passes, and every one of them is a chance to get it wrong.
Amenda Leckers has been doing it since 1996 and still sells the way it always has, by the loaf and the whole cake, to people who ring up knowing exactly which flavour they want.
Banjiroll and Tapak Kuda
Alongside the lapis, the bakery makes Banjiroll, a rolled sponge sliced to order, and Tapak Kuda, the horseshoe-shaped butter cake that turns up next to a kopi at four in the afternoon.
Both are available through AKHDOR on the same order as the lapis.
